This was the salad dressing for my lunch today. It is very similar to the dressing I normally make except for the garlic and mint. Here is the dressing “standing”:
And here it is on the salad (with leftover chicken and a giant homemade pickle):
The garlic really helped the dressing, and so I will definitely be adding garlic to my dressings in the future. I could not really taste the mint but always looking for uses for fresh mint. Here is the dressing being used in my salads in a jar for lunch the next couple of days:
